Ingredients for 8 servings

2 cup Zucchini, unpeeled & grated

1 tsp Sea Salt, fine grain

2 1/2 cup Ricotta Cheese

1/2 cup Parmesan Cheese, freshly shredded

2 x Shallots, chopped

2 x cloves garlic, chopped

1/4 cup fresh dill, chopped

1 x Zest of lemon

2 large eggs, well beaten

1/3 cup Goat Cheese, crumbled

drizzle x Olive Oil
