Ingredients for 4 servings

1.5 lb pork tenderloin (fat removed)

2 tbsps yellow mustard

2 tbsps finely grated parmesan cheese

1 tsp maple syrup

2 tsps italian seasoning

1 tsp cracked pepper

6 bacon slices

Preparation

1.

Trim tenderloin of all excess fat

2.

In a mixing bowl combine all ingredients for marinade

3.

Coat tenderloin with marinade; refrigerate for 1 hour

4.

Preheat oven to 500F

5.

Wrap tenderloin with bacon tightly, overlapping the edge of each slice

6.

Roast in the oven for 20-25 mins or until it reaches an internal temperature of 145F

7.

Remove from oven and rest for 10mins
