2 1/2 cups flour
1 1/2 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp ginger
4 tsp cinnamon
3/4 cups vegetable oil
1 cup milk
1 tsp vanilla extract or maple syrup
Mix first seven ingredients with fork until crumbly.
Set aside 1 cup of mix for the topping.
Add remaining ingredients.
Pam the pan.
Pour mix into muffin cups. Add peeled apples to cups.
Top mix with crumble.
Bake at 325 degrees for 15-20 min.
Mix glaze ingredients. 1 1/2 cups powdered sugar, 1tsp vanilla, and 2 1/2 Tbsp Milk.
Top muffins with glaze after cooling 5 minutes.
