Ingredients for 8 servings

1/2 cup carrot , chopped

1 grocer's rotisserie-cooked chicken (or 3 cans chunk chicken with dark meat, drained)

1/2 cup celery , chopped

1 cup pearl barley , well rinsed

1 medium apple , chopped

1 cup toasted pecans , very coarse chop

1/4 cup fresh squeezed orange juice

salt and pepper, to taste

35 red seedless grapes , halved

1 teaspoon Dijon mustard

DRESSING

1 1/2 tablespoons red wine vinegar

2 tablespoons sugar or Splenda sugar substitute

2 1/2 cups chicken broth

2 tablespoons jalapenos, canned, mashed well

2 tablespoons mayonnaise

1/4 cup extra virgin olive oil
