I thought the peanut butter was a touch of genius, and I think I am going to try some with BBQ sauce as well.

Chiffonaded the collards, tossed them in the oil/chipotle with tongs, used < 1 cup stock instead of water, cooked, covered <20 minutesuntil tender - worked out well. More nutrients, shorter time.

Ingredients

3 bunch collards (about 3 pounds)

1 x onion, diced

4 x cloves of garlic, minced

1 x carrot, diced

2 tbsp Olive Oil

2 x tomatoes, peeled and diced or 1 14 oz. can of diced tomatoes

2 x chipotle peppers in adobo, chopped

1/4 cup Smooth Peanut Butter

1 tbsp Apple Cider Vinegar
