12 to 24 amaretti cookies, depending on size, broken into pieces

1/2 cup all-purpose flour

1/4 cup golden brown sugar

2 tablespoons canola oil

2 tablespoons unsalted butter, melted

The fruit:

2 pounds medium to large apricots (about 10)

1/2 pound cherries (about 30), pitted and halved

2 tablespoons cornstarch

1/3 cup granulated sugar
