1/2 pound boneless chicken thighs – with or without skin, cut into bite size pieces

1 tablespoon rice wine (optional)

1 teaspoon sugar

1 1/2 cups water or chicken broth

2 tablespoons unsalted butter

3 tablespoons herb infused extra virgin olive oil**

6 ounces Golden Chanterelles or other types of mushrooms

1 1/2 cups shelled edamame beans – frozen***

2 tablespoons soy sauce
