2 cups kale, thinly sliced into ribbons (dinosaur kale used)

1/2 cup chick peas / garbanzo beans (canned/organic)

1/2 cup avocado, diced (+ a few slices for garnish)

1/8 tsp lemon zest

1 satsuma, peeled

avocado slices

Vega Antioxidant Omega Oil blend (or other healthy oil) (drizzled over top to serve) (optional)

1-1 1/2 Tbsp creamy tahini, organic

1 Tbsp apple cider vinegar

1 tsp lemon juice

2-3 tsp maple syrup

a few pinches black pepper

pinch salt

pinch cayenne
