So delicious! I followed this recipe but made a few modifications based on things I picked up at the farmer's market and had in my cupboard. We left out the pine nuts (regretfully), walnuts, and goat's cheese. Added zucchini to roast with the squash, parmesan cheese to melt into the pasta, and sautéed swiss chard plus corn to have on the side.

Ingredients for 4 servings

1 small butternut squash, peeled and cut into 1/2″ cubes

1 small red onion, peeled and cut into 12 lengthwise wedges

4 tbsp olive oil

1/2 tsp dried thyme

pinch of sea salt

150 g whole wheat pasta

2 tbsp balsamic vinegar

20 g pinenuts

30 g walnuts, chopped roughly

sea salt and black pepper, to taste

30 g soft goat’s cheese, crumbled
