1/4 cup + 2 tablespoons sliced almonds

1 1/2 tablespoons olive oil

2 pounds summer squash like zucchini, sliced and cubed 1/2 inch thick

-- Gray salt

Freshly ground pepper to taste

1 tablespoon finely chopped fresh basil or thyme

1 1/2 cups couscous

1/4 cup honey

1/4 cup cider vinegar

1/2 cup extra virgin olive oil

1 cup spinach leaves, chiffonade, or cut into wide ribbons

1/4 cup roasted red peppers (optional)
