16 Ingredients

  • 1 cup long grain rice
  • 2 cups water
  • 1 Tbsp olive oil
  • a small pinch of saffron (about 10 strands)
  • 1/2 tsp salt
  • 1 boneless skinless chicken breast, cut in bite-size pieces
  • 2 links Mexican or Spanish chorizo (I used Mexican)
  • a small bunch of cilantro, chopped fine (about 1 cup before chopping)
  • 1/2 red onion, chopped
  • 1/2 green bell pepper, chopped
  • 1 cup cherry tomatoes, sliced lengthwise
  • 2 cloves garlic, chopped fine
  • the juice of 1 lime
  • 1/4 cup olive oil
  • 1 tsp cumin
  • salt and pepper to taste
