3 ripe, but firm, apricots, diced

1 red bell pepper, diced

1/2 cup chopped pecans, toasted

1/4 cup dried currants, soaked for 5 minutes in 1 cup boiling water

1 bunch green onions (about 5), finely chopped

1/4 cup fresh parsley, minced

1/3 cup canola oil

2 tbsp white wine vinegar

1 tsp salt

1/2 tsp pepper

1/4 tsp cayenne pepper

1 tbsp honey
