To really dress this up, toast some French bread, butter it, spread with Dijon mustard, sprinkle with parsley. Place this pieces on top of the baking dish containing the already cooked stew. Then bake for 20 min. at 350deg. F.

Ingredients for 2 servings

1 pound beef chuck, cut into 1-inch chunks

2 tablespoons olive oil

2 sweet onions, halved and sliced

3 cloves garlic, minced

1 1/2 teaspoons dark brown sugar

3 sprigs fresh thyme (or 1/2 teaspoon dried)

1 bay leaf

1 cup beef broth

1 cup dark beer (preferably Belgian ale)

1 tablespoon whole-grain mustard
