Ingredients

2 Green Chili, seeded and roughly chopped

Generous Handful of Mint Leaves

1 Bunch of Cilantro, roughly chopped

1/2 teaspoon Ground Ginger

1/2 teaspoon Kosher Salt

1/2 tablespoon Good Olive Oil

1/4 cup Plain Yogurt ( I use Greek Yogurt)

1 tablespoon Lemon Juice

1/2 tablespoon Red Onion, Minced

1/2 cup Peanut Oil

1 pound Russet Potatoes, peeled and grated

2 Large Eggs, lightly beaten

3/4 cups Spanish Onion, grated

2 1/2 teaspoons Kosher Salt

1/2 teaspoon Ground Cumin

1/4 teaspoon Ground Tumeric

1/4 teaspoon Chili Powder

1 tablespoon Cilantro, finely chopped

1/2 cup Original Panko Breadcrumbs (optional, but adds extra crunch)
