1/2 cup chopped onion

2 tsp. extra virgin olive oil

1 tsp. minced garlic clove

2-3 tsp. curry powder

1 1/2 cups brown lentils, rinsed and sorted

2/2 cup chicken broth, optional

1 tsp. salt

Ground pepper, to taste

2 cups (half a 5-oz bag) lightly packed baby spinach leaves, chopped or 10 oz. frozen chopped spinach
