2.0 tbsp olive oil

400.0g can chopped tomatoes

2 garlic cloves , finely chopped

200.0g dried apricots

2 large handfuls coriander , roughly chopped

1 large onion , roughly chopped

120 g pack pomegranate seeds

TO SERVE

400.0g can chickpeas , rinsed and drained

2 large carrots , quartered lengthways and cut into chunks

600.0ml chicken stock
