50 g Caster Sugar

80 g free range egg yolks

75 g egg whites

50 g cold water

180 g caster sugar

250 g Damson Puree

250 g Double cream

250 g plain flour

150 g unsalted butter

40 g extra virgin olive oil

100 g caster sugar + extra for dusting

2 medium free-range egg yolks

Zest and juice of one lemon

1 tsp thyme leaves

Pinch of salt

90 g Damson puree

40 g sloe gin

10 g fresh lemon thyme

30 g extra virgin olive oil

3 whole blackberries

½ fresh damson

1 tbs lemon stock syrup

Fresh lemon thyme flowers and leaves

½ tsp blackcurrant powder

½ tsp caster sugar

A few drops of the chilled thyme oil

2 olive oil and thyme sable

1 prepared frozen parfait

1 tsp damson and sloe gin drizzle

1 chilled serving plate
