Ingredients for 6 servings

2 Tbsps canola oil

1/2 cup yellow onion, peeled and chopped

2 cloves garlic, peeled and finely minced

2 green onions, chopped (both white and green parts)

10 sprigs of cilantro, removed from stems and roughly chopped

2 tomatoes, cored and chopped

1 15 oz can of dark red kidney beans, rinsed and drained

1/2 of a 15 oz can of coconut milk

3 cups of long-grain rice, rinsed several times with cold, clean water and drained

2 cups water

Salt and pepper to tasted

2 Tbsps butter
