1 tbsp farmers cheese
1 tsp finely chopped cilantro
1 tsp finely diced onion
1 tbsp sorrel (chopped)
Whisk eggs with a dash of water. Heat medium size pan (spray olive oil on bottom to prevent sticking).
When pan is very hot, pour eggs in and allow eggs to settle. Move eggs around with spatula to ensure even cooking
Sprinkle farmers cheese, cilantro, onions and sorrel on 1 half of eggs.
Allow toppings to settle onto eggs, then fold eggs over... Voila
