1/2 c. red lentils

1/2 chopped onion

1 T curry powder

1/4 tsp salt

1/4 tsp ground coriander

2 cup water

4. Add the cauliflower, zucchini, garlic, 28 oz. jar of fire-roasted tomatoes, 1 tsp cumin, 1 1/2 tsp curry powder, and 1 tsp ginger. (I love the curry flavor. If you aren’t a huge fan, add a little less.)
