Ingredients for 9 servings

1/4 cup apple brandy (Calvados is good)

3/4 cup dry white wine

3/4 cup heavy cream

1 1/2 lbs granny smith apples , cored, peeled and cut into large dice plus about 2 1/4 cups fine-diced apples, for garnish

1 cup plain readymade applesauce

1 2/3 cups plain vanilla yogurt

2 1/2 tablespoons unsalted butter

1 1/2 cups water

3/4 cup sugar

1 ounce gingerroot , peeled and chopped (about a 21/2-by-1-inch piece)

2 teaspoons ground cinnamon (to taste)

1 2/3 cups vanilla ice cream
