a handful of fresh basil stalks chopped leaves ripped

a large handful of fresh marjoram or oregano roughly chopped

200 g mozzarella broken up

400 g crumbly ricotta cheese

sea salt and freshly ground black pepper

16 cannelloni tubes

for the white sauce

3 anchovies finely chopped

of a nutmeg grated

a pinch of sugar

2 knobs of butter

2 cloves of garlic peeled and finely sliced

2 handfuls of freshly grated Parmesan cheese

1 x 500ml tub of cr me fra che

8 large handfuls of spinach thoroughly washed

2 x 400g tins of good quality plum tomatoes chopped
