1 cup rolled oats
3/4 cup desiccated coconut
1 cup brown sugar
1 cup plain flour sifted
125 g butter
3 tbsp golden syrup
1 1/2 tsp baking soda
2 tbsp boiling water
Preheat oven to 300°F
Sift the flour into a bowl. Add the sugar, rolled oats and coconut.
Heat butter and syrup over low heat until melted.
Stir the baking soda into the liquid mixture.
Add the liquid to the dry ingredients and mix thoroughly.
Use a dessert spoon to portion cookies onto a baking sheet lined with parchment.
Bake for 20 minutes or until golden brown.
Cool on tray and serve.
