Heather, good comments, I agree, bake the squash, maybe add some butter before stuffing it but this will add to the fat content, could use seasoned salt and pepper or spice/flavor up the ground beef itself, thanks for the input

I will make this again, but with some major variations. It was a royal pain to make as written. One, be sure to cook the hamburger. (Don't ask.) Two, bake the squash instead of boiling, which doesn't work well and coats your pot with wax. (Yuck.) Three, add some spices. Four...well, if it doesn't work to stuff the squash, the filling is great for tacos. That's how I'm planning to use it. Also, it's pretty crumbly as is so you may want to add more cheese.

Ingredients for 4 servings

4 x acorn squash

1 1/2 cup cooked beef, finely chopped

2 tbsp chopped fresh parsley

1 cup cooked brown rice

1 1/2 cup grated hard cheese, such as Gruyere, Comte, or Parmesan

Salt and pepper, to taste

1/4 cup water

Olive oil (for sprinkling)
