Ingredients for 3 servings

2 tbl Olive oil

2 x Onions (chopped)

2 stalk of celery chopped (optional)

1/2 x Red sweet pepper chopped, for color

1 x Eggplant (cubed about 3/4 inch)

2 x Cloves of garlic, chopped or mashed

1/2 tsp Ground cumin plus 1 pinch whole

1/2 tsp Ground coriander

1/4 tsp Ground pepper

1/4 tsp Crushed dried chili pepper

1 tbl Tahini *

Juice of 1/2 to 1 lemon (to taste) or lime

Parsley sprigs and a lemon slice to decorate
