1/3 cup soy sauce
1/3 cup mirin
1/4 cup honey
2 TBSP toasted sesame seeds
2 TBSP freshly grated ginger
2 green onions
1.25 lbs Boneless Skinless Chicken Breast
1 Bell Pepper
Toast sesame seeds over medium heat, shaking occasionally, until darker and fragrant
Combine all sauce ingredients (soy sauce, mirin, honey, seeds, ginger, green onions), mix.
Add chicken and sauce into plastic freezer bag, and let it marinade for 8-24 hours
Begin to cook 1 cup of brown rice. Sautee onion, carrot and bell pepper with a little coconut oil in one pan
Drain marinade into another pan, bring to a boil, then lower heat to reduce sauce
In a skillet/griddler, cook chicken breast with a little coconut oil over medium heat
Combine rice, veggies, reduced marinade, and chicken breast in bowl. Garnish with avocado and cilantro.
