Ingredients

olive oil

stock preferably organic

200 g jarred red peppers in oil

5 cloves of garlic peeled

300 g pork belly skin

12 large prawns shells on

drained and torn into pieces

1 red pepper deseeded

chopped tomatoes

2 raw chorizo sausages

and roughly chopped

a good pinch of saffron

300 g paella rice

sea salt and freshly ground

150 g green beans sliced

a small bunch of fresh

total thickly sliced

roughly chopped

stalks finely chopped

1 litre chicken or vegetable

150 g squid cleaned and

picked and roughly chopped

removed the best quality

approximately 250g in

400 g clams or mussels

1 x 400g tin of

you can afford cut into

1 cm pieces

very thinly at an angle

1 green pepper deseeded

finely sliced

black pepper

scrubbed clean and debearded

1 lemon cut into wedges

1 onion peeled and

flat leaf parsley leaves
