4 large egg yolks

2 tablespoons aged dark rum

3 cups all-purpose flour, plus more for rolling

1/4 teaspoon baking soda

2 cups fresh or flash-frozen raspberries

3/4 cup granulated sugar

1 1/2 teaspoons fresh lemon juice

1 large egg, beaten, for glazing (optional)
