1 cup red lentils, rinsed and drained

2 tablespoons unsalted butter

1 tablespoon canola oil

2 tablespoons minced peeled fresh ginger

1 tablespoon minced garlic

1 large onion, halved and slivered

2 teaspoons ground cumin

1/8 teaspoon ground cloves

pinch of ground turmeric (or more as desired)

4 cups vegetable broth

4 plum tomatoes, seeded and cut into 1/4-inch dice

1/2 cup coarsely chopped flat-leaf parsley

salt, to taste

fresh ground black pepper, to taste
