1 1/3 cup fresh, peeled water chestnuts, 1/8-inch dice


1 clove garlic, minced

1/4 cup + 2 tablespoons fresh chives

1 tablespoon anchovy paste

5-6 tablespoons minced fresh tarragon

3/4 cup mayonnaise

1/4 cup plain yogurt

1/4 teaspoon cayenne

1/2 teaspoon Worcestershire sauce

Salt and pepper to taste
