Battered Curry Cakes

Notes Red Pepper flakes are optional if you want these babies to have a bit of a kick. You can also use regular all purpose flour if you do not have soy flour.

Ingredients for 4 servings

1 Block of Extra Firm Tofu (sliced)

1 Cup Soy Milk

1 Cup Soy Flour

1 1/2 Cup of Panko

1/2 cup of Corn Meal

1 Tbsp Choice of Curry powder

1/2 Tbsp Powdered Ginger

1 Tsp Tumeric

1/2 Tsp Ground Cardamom

1/2 Tsp Cumin

1/2 Tsp Salt

1/2 Tsp Black Pepper

Vegetable or Canola oil for deep frying.

Preparation

1.

Take your block of tofu and slice it thinly.

2.

Take a paper towel and place each individual slice on it to drain any excess water out.

3.

Take your panko and cornmeal and mix it together with the rest of the spices.

4.

During this process start heating up your oil. Give it a minute to get hot.

5.

Take a slice of tofu and coat it with the soy flour.

6.

Then dip it in the soy milk

7.

Dip that into the panko mix and make sure to coat both sides evenly.

8.

Fry it. It should take a good minute or so for each side.

9.

Once you are finished take it and place it on a sheet of paper towel to drain the excess oil.

10.

You can serve this by itself or make a delicious dipping sauce for it.

11.

Japanese curry paste. I added water, sat, pepper, and curry powder. I then added a little flour to the sauce to make it thicker almost like a roux.
