This is absolutely delicious! I actually didn't have all the right ingredients so I used a balsamic vinegar not a red wine vinegar and substituted regular raisins for golden raisins (even though I'm sure golden raisins would have tasted delicious!) I added some salt as well as saffron to the cous cous while it was still in the pot. Fresh, healthy, filling, and light! I definitely recommend this!

Coarse salt and ground pepper

1/3 cup whole-wheat couscous

1 cup small broccoli florets (2 ounces)

1/2 cup canned chickpeas, drained and rinsed

2 tablespoons golden raisins

1/4 cup crumbled feta cheese (1 ounce)

2 teaspoons extra-virgin olive oil

1 tablespoon red-wine vinegar
