Organic no stick cooking spray

4 ounces fresh ginger – peeled, sliced and chopped very fine – we used a knife and then the blender

1 cup mild molasses

1 cup sugar

1 cup peanut oil

2 1/2 cups flour

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground black pepper

1 cup boiling water

2 teaspoons baking soda

2 eggs at room temperature, lightly beaten

12 8 oz mason jars with lids – boiled to sterilize
