Salt and freshly ground pepper

1 large yellow onion, finely chopped

1 large carrot, finely chopped

1 garlic clove, thinly sliced

1/2 cup dry white wine

2 cups chicken stock or low-sodium broth

1 thyme sprig

1 pound sturdy greens, such as kale or turnip greens, stemmed and leaves coarsely chopped

2 tablespoons unsalted butter

1 pound fresh or frozen gnocchi

Freshly grated young pecorino cheese, for serving
