3 tablespoons EVOO

1/4 pound fresh chorizo, casings removed

1/2 small onion, chopped

2 cloves garlic, grated or minced

1 poblano chile, roasted, peeled and diced

Corn kernels cut from 1 ear corn

Salt and pepper

4 eggs

1 tablespoon chopped mixed herbs, like parsley, thyme and cliantro

1/2 cup tomato sauce

1 1/2 teaspoons minced chipotle in adobo or hot sauce, such as Frank's RedHot

1/2 cup store-bought salsa verde

1/2 cup crumbled queso fresco
