1 tablespoon EVOO

1 pound spicy bulk breakfast sausage, crumbled (I like Oscars Adirondack Smoke House special spicy blend)

3 cups chicken stock

1 1/2 cups whole milk

1 1/2 cups quick-cooking polenta

Salt and pepper

1 teaspoon fennel pollen or ground fennel

1 1/2 cups grated parmigiano-reggiano

5 tablespoons butter

6 jumbo or extra-large organic eggs
