Ingredients for 4 servings

1/2 teaspoon dried thyme

1 onion, halved

2 whole-wheat whole-wheat pita, split and cut into triangles

1/2 teaspoon salt

1 tablespoon minced shallots

2 tablespoons reduced-sodium chicken broth

1 tablespoon chopped fresh parsley

1 bay leaf

2 tablespoons red- or white-wine vinegar

1 large red bell pepper, roasted and cut into thin strips (see Tip)

2 tablespoons extra-virgin olive oil

1 stalk celery, halved

4 cups water

1/2 teaspoon freshly ground pepper

2 cloves garlic, minced

3/4 cup green lentils, rinsed and picked over

1/4 cup crumbled feta cheese, (1 ounce)

1 teaspoon Dijon mustard
