2 1/2 cups chopped cooked chicken, preferably a mixture of white and dark meat (we used only white meat)

12 small cremini mushrooms , finely chopped (we used button mushrooms) or 16 button mushrooms , finely chopped (we used button mushrooms)

1/4 teaspoon freshly grated nutmeg

1/4 cup frozen sweet peas

1 cup milk

2 1/2 cups organic low sodium chicken broth

1 tablespoon milk

4 tablespoons salted butter

5 tablespoons flour

2 cups flour

1 egg

1/2 cup buttermilk (well shaken)

2 tablespoons buttermilk (well-shaken)

2 medium yukon gold potatoes , peeled and finely chopped

2 teaspoons minced fresh sage

1/2 teaspoon baking soda

egg wash

1 teaspoon chopped fresh thyme

1 egg yolk, whisked with

fresh ground black pepper , to taste

5 tablespoons cold unsalted butter , cubed

3 carrots , peeled and finely chopped

2 teaspoons salt or Mrs. Dash seasoning mix

3 pinches red pepper flakes (or to taste) (optional)
