This was great! I added another clove of garlic and prob went heavy on chili flakes. Most ingredients I was over, really. Made a lot. I served with veggie sausage on the side or sliced on top.

Ingredients for 4 servings

1 small head broccoli, cut into bite-sized florets

1 litre vegetable stock

1 tbsp butter

1 tbsp olive oil

1/2 large white onion, finely chopped

1 x clove garlic, minced

1/4 tsp chili flakes

250 g arborio rice

75 g strong white cheddar, grated

15 g parmesan, grated

salt and pepper

2 tbsp cream
