Ingredients for 4 servings

2 pounds of sweet potato, cut into 1” pieces and microwaved in a bowl on high for 6.5 minutes to start the cooking process

3 cloves garlic, pressed

1 can lite coconut milk

1 cup 2% milk (or skim, or whole)

1 tsp garam masala

1/2 tsp kosher salt

1/4 tsp black pepper

1/4 tsp red pepper flakes

4 cups kale, trimmed, washed and torn into small pieces

1 tsp vanilla extract

1/4 cup raisins

1/4 cup salted peanuts, for garnish

Shredded coconut, for garnish
