1 1/2 pounds beef brisket (or 1 1/2 pounds ground beef)

1/2 pound pork shoulder (or 1/2 pound ground pork)

1 Tablespoon olive oil

1 medium onion, minced

2 cloves garlic, minced

2 teaspoons fennel seeds, toasted in a dry pan for 5 minutes or until fragrant

1 1/4 teaspoons salt

1/2 teaspoons pepper

1/2 cup white wine

1/2 cup bread crumbs

4 Tablespoons parsley, minced

1 egg

1/2 cup parmesan cheese, grated

1/2 onion, minced

1 carrot, peeled and minced

1 celery stalk, minced

1 28-ounce can tomato sauce

4 Tablespoons fresh basil, minced

1/4 cup dry white wine

salt and pepper

1 pound perciatelli (or spaghetti)
