  • 1 lb dried cannelini or other small white bean
  • 2 Tbsps olive oil
  • 4 cloves garlic
  • 1 small white onion
  • 2 lemons
  • 2 lbs boneless skinless chicken thighs
  • Kosher salt and freshly ground black pepper
  • 4 sprigs fresh thyme or 2 tsps dried thyme
  • 2/3 cup finely chopped fresh dill fronds or 2 Tbsps dried dill
  • 1/3 cup almonds (or pine nuts if you want a traditional pesto)
  • 2 garlic cloves
  • 1/4 cup olive oil, plus more if necessary
