1 lb 2 oz zucchini

1 large orange pepper

1 x red pepper

10.5 oz cherry tomatoes

1 x onion

2 x garlic cloves

1 tbsp tomato paste

1 tbsp brown sugar

A few thyme twigs

Fresh bunch of parsley

1 pinch Espelette pepper

Olive oil

Salt and pepper

4 large eggs

Fresh Goat cheese (Chavrou or Petit Billy)

4 x prosciutto slices

Basic Pie crust for 4 tartlets, precooked for 25 mns or so in the oven at temperature 350 F

Tarragon, chopped
