Ingredients for 4 servings

2 stalks celery

2-3 tablespoons curry powder

1 kaffir lime leaf

1/2 cup chicken stock

2-3 garlic cloves (minced)

1 tablespoon cumin powder

1 tablespoon chopped cilantro

1 (14 ounce) can coconut milk

1 tablespoon chopped roasted peanuts or cashews


1 large turkey breast (cut into 1-inch cubes)

Meat or veg variations

1 medium head broccoli (chopped into florets and steamed until tender)

2-3 tablespoons curry paste

1/2 head cauliflower (cut into florets and roast in oven with olive oil, salt & pepper at 400 degrees for 15 mins)

1 tablespoon chopped scallion

2 large boneless skinless chicken breasts (cut into 1-inch cubes)

1 lb firm white fish fillet (cut into 1-inch cubes)

1 lb firm tofu (cut into 1-inch cubes and fried)

1 lb medium shrimp (raw or cooked)
