2 carrots , finely sliced into sticks

200.0g brown basmati rice

150.0g pack shiitake mushrooms , sliced

2 tbsp chilli jam

3 garlic cloves , finely chopped

1 red pepper , finely sliced

thumb-size piece ginger , grated

1.0 tbsp sesame seeds , toasted

1 bunch spring onions , finely sliced lengthways

3 eggs , beaten with a splash of skimmed milk

1.0 tbsp rapeseed oil

2.0 tsp soy sauce
