Ingredients for 2 servings

6 x yellow beets , well-scrubbed and washed, greens cut off for another use

2 x garlic cloves,unpeeled

1 tbsp Olive Oil

4 tbsp Red Wine Vinegaror other robust vinegar

4 tbsp scallions chopped, whites only

3 tbsp cilantro leaves, chopped

1 scant handful walnut meats broken, very coarsely chopped, toasted in a skillet for approximately 10 minutes

salt and pepper to taste
