Approximately 5 1/2 cups chicken broth (if canned, dilute 50-50 with water)

3 tablespoons unsalted butter

1 tablespoon extra virgin olive oil

1/2 yellow onion, minced

1 1/2 cups Arborio or other short-

grain Italian rice

Salt and freshly ground pepper, to taste

1 tablespoon minced parsley

Freshly grated Parmesan cheese (optional)
