1 teaspoon fleur de sel (I used one scant teaspoon)

1 tablespoon freshly grated and finely chopped lemon zest (from organic lemons if possible!)

3.5 ounces (7 tablespoons) unsalted butter

one egg yolk

1/2 cup powdered sugar

1 1/2 tablespoons lemon juice
