Ingredients for 4 servings

1/4 cup oil

1 large onion, diced

1 carrot, diced

2 parsnips, diced

1 celery stalk, diced

1 small potato

1/2 bulb fennel, diced

1/2 teaspoon thyme

2 tablespoons minced fresh sage

3 cloves garlic, minced

1 can chickpeas, drained

pepper

2.5 tablepsoons flour

1/2 cup white wine

1 1/2 cups vegetable broth

1 pie crust, recipe follows

1 egg, beaten

1 1/4 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon sugar

10 tablespoons Spectrum shortening, chilled in the fridge for 1 hour

1 egg yolk

1-2 tablespoons cold water, as needed
