  • 1/4 cup oil
  • 1 large onion, diced
  • 1 carrot, diced
  • 2 parsnips, diced
  • 1 celery stalk, diced
  • 1 small potato
  • 1/2 bulb fennel, diced
  • 1/2 tsp thyme
  • 2 Tbsps minced fresh sage
  • 3 cloves garlic, minced
  • 1 can chickpeas, drained
  • salt
  • pepper
  • 2.5 tablepsoons flour
  • 1/2 cup white wine
  • 1 1/2 cups vegetable broth
  • 1 pie crust, recipe follows
  • 1 egg, beaten
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp sugar
  • 10 Tbsps Spectrum shortening, chilled in the fridge for 1 hour
  • 1 egg yolk
  • 1-2 Tbsps cold water, as needed
