3 cups organic wild blueberries

1/4 cup fresh cilantro , chopped

1 medium lemon

1 tbsp olive oil

1 red onion , chopped

2 tbsp clear honey

1 tbsp fresh ginger , minced

1 tsp ground cardamom

1/2 cup fresh apple cider

1 medium cauliflower

2 cloves garlic , minced

Sea salt , to taste

1/4 tsp white pepper

18 baby beets , with greens

6 tbsp olive oil

3 tbsp freshly ground horseradish

6 fresh halibut fillets , 1 inch thick

18 baby beets , greens reserved
